Ultimate Nachos
Ingredients
- 200g grated mozzarella
For the Guacamole
- 1 large ripe avocado
- 1/2 juice of 1 lime
- Salt & pepper to taste
- 1 tsp dried chilli flakes
For the salsa
- 300g ripe tomatoes
- 1 small red onion
- 2 garlic cloves
- 1 red or green chilli - de-seeded
- 1/2 bunch coriander
- 1/2 juice of 1 lime
- 1 tbsp extra virgin olive oil
- Salt & pepper to taste
Method

Firstly make the salsa; add the onion, garlic and chilli into the Bamix processor, pulse until finely chopped, add the tomatoes and pulse until the tomatoes are coarsely chopped, now add the coriander plus the stalks, along with the lime juice and oil, blitz again until you reach the desired texture. Season to taste, then refrigerate until ready to serve.
- For the guacamole, add avocado and lime juice to the Bamix jug. Using the C blade pulse the mixture until you reach the desired texture, I like mine smooth with a few chunks of avocado.

Once it's reached your desired consistency, season with salt and pepper and the chilli flakes.
- Tip tortilla chips into an oven proof serving dish, add the grated mozzarella and put under a hot grill for about 3 minutes to melt the cheese. Serve with a spoonful guacamole and salsa.
